
A healthy and delicious granola bar from Kristjana Steingrímurs (Jana):
* 2 cups chopped nuts
* 1/3 cup coconut flour
* 4 tablespoons pumpkin seeds
* 2 tablespoons hemp seeds
* 1 tbsp collagen from Feel Iceland
* 1/3 cup almond butter
* 1/4 cup acacia honey/maple syrup
* 2 tablespoons coconut oil
* A little vanilla
* A little cinnamon
* 100 g quality chocolate (melted over a water bath)
Heat maple syrup, almond butter and coconut oil together in a pot over low heat, stir well.
Remove from the heat and let cool slightly.
Then add the rest except the chocolate to the warm mixture.
Then place in a mold with baking paper underneath or, as I did, in a silicone mold. Press the mixture well into the mold.
Melt the chocolate over a water bath and pour evenly over the base.
Cool – cut into slices & enjoy
