
Super healthy, beautiful and quick energy bites from Kristjana Steingrímurs (Jana):
* 3 cups coconut flour
* 1 cup almond flour
* 1-2 tbsp Feel Iceland collagen powder
* 1/3 cup liquid coconut oil
* 1/3-1/2 cup liquid sweetener, such as acacia honey or maple syrup
* 1/2 – 1 tablespoon quality Matcha tea
* 1 teaspoon vanilla
* A little salt
Put everything together in a bowl and mix well, you can also use a food processor and mix well. Make small balls and roll them in coconut flour, place in a box and store in the freezer.
You can also simplify it and press the dough onto baking paper and freeze, then cut into colored pieces and store in the freezer. If you want to make the pieces extra pretty, you can melt white chocolate and spread a little over the pieces before they go into the freezer.
